A Few Changes...

My blog is changing!!! And I'm so excited about it!!! It's sort of underconstruction at this point. You will see new tabs and gadgets added over the next few days and I'm going to change up the design a little. After a few months of blogging, I've decided what I'd like to focus my blog around. Turkey Taco Lettuce Wraps

For a lighter alternative to taco shells you can enjoy these lettuce taco wraps. Add your favorite toppings like low fat cheddar, light fat sour cream, chives, tomatoes or whatever you like on your tacos. Making your own taco seasoning is a healthier alternative to buying packaged taco seasoning, and uses less sodium, no sugar, no preservatives and no msg. If you prefer to use the package seasoning, simply replace it with the spices listed here. I got this recipe from a fellow blogger friend. She has tons of great recipes. I didn't figure the fat and calories on this one, because the turkey and toppings of your choosing are virtually the only calories/fat in them. I would assume that 2 wraps are only about 200 calories and 2.5 g. fat (not including toppings). That's amazing for something that is filling and actually tastes good!

What you'll need:

1.3 lbs 99% lean ground turkey
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp chili powder
1 tsp paprika
1/2 tsp oregano
1/2 small onion, minced
2 tbsp bell pepper, minced
3/4 cup water
1/2 8 oz can tomato sauce
8 large lettuce leaves from Iceberg lettuce

Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.

Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer. (Toppings extra points)

My hubs is not a lettuce fan and he even liked them. However, he did prefer his 2nd AND 3rd taco on whole wheat tortillas :P

I seriously pulled right out in front of a Mack truck after dropping Lexi off at Preschool this morning. Not even a Peterbilt or Freightliner, a MACK truck. Is it bad that I thought about slowing down?

She threw up again this morning.

They Never Said it Would be THIS Hard!!

...than drop Alexis off at preschool one more day. She got herself so worked up and upset about going to school this morning that she puked on the way there. Everyone keeps telling me it's going to get better, so I'm still hanging in there...even if she hates me for the rest of her life. Oh the dramzzz!

On a much happier note: My grandpa had a successfull 2nd surgery to stop the internal bleeding and has been moved out of ICU! YAY!!!!!! Thanks for the Prayers!!

1st Day of Preschool :..(

Oh muh baybee be growin' up and I don't like it one bit! And BTW I'm going to apologize beforehand for the crappy pictures taken from my PHONE... someone really needs to buy me a camera. Please and thank you :) I have like 3 cameras, but don't like any of them and the phone is just so convenient. Anywho...

Okay so things started out good. We went and bought school supplies (markers, paint, SCISSORS! OMG scary!, back pack, etc.) the night before. Lexi was super pumped about all these new, fun things she was going to get to play with at school. She was even talking some major game the night before about wanting to go to school. She was ready...

Morning of the first day: She was still all pumped and ready to go and boy was she ready to carry her "pack pack" and don't anyone dear touch that dear "pack pack" b/c IT'S HERS!!

M'Kay off we go...
So we get to her class, there's about 6 kids in there. A mother drops her screaming son off, Lexi is like what.is.going.on OMG this place must be H*ll! I go to set her down. H*ll no you ain't settin' me down. Have you lost your ever lovin' mind?! Let's get outta here while the gettin' is good! So we try to destract her with toys and the other kids and what not...works for a minute...I slowly stand up and she QUICKLY says "No momma, you play with me!" She wasn't letting me out of her sight. Apparently, she was under the impression that mommy and daddy would be attending school with her :/ Then finally daddy ditches me because "he doesn't want to be late for work". Thanks for the support Hun! Pssshhh...he couldn't bare to stand there and watch his little baby girl have a complete meltdown, because trust me you could see it coming. She could see what we were plotting to do and she was not having it. I'm here to say that if leaving your child an entire day with complete strangers in a complete foreign place isn't traumatizing, I don't know what is. Oh the dramzzz!!! So finally I just had to make my escape. She grabbed me, hung on for dear life, and screamed bloody murder. Was.not.a.pretty.sight. Finally, I get her unattached, hand her over to her teacher, and run. My eyes welled up and a major knot formed in my throat. OMG! This was worse than going back to work the first day after my maternity leave.

So I get to work and I'm already wanting to call the daycare to see if she's still crying. I held off till about 10:00. They said she was doing good at that point. All I could think about was her all day long and it was the LONGEST.DAY.EVERRRR! Derek and I texted each other all day about her...we were ridiculous really. I planned to leave work a little early so I could pick her up. I texted Derek to let him know he wouldn't need to get her. And about 15 minutes before I was going to leave work, he texted me and said he was there. I was furious!!! I wanted to pick her, since I was the one that "left" her there last. However, I didn't want to make her wait any longer so I sucked it up and let him go ahead and get her. When he got there she was fine, but as soon as she saw him she started bawling (they say that's normal) and she said "Momma forgot me." Talk about a friggin' dagger to the heart!! OMG!! Killed me! THIS IS WHY I WANTED TO PICK HER UP!!! The teacher said she was pretty good until they moved into the bigger room with a lot more kids...then she cried off and on all day after that.
So she cried for about 10 minutes after he picked her up. Then when she got calmed down, she told us about her day and how GREAT it was lol! Oh this kid, she's quite the trickster! She could have won an Emmy...it was an award winning performance, let me tell ya!

We asked her if she ate at school and she said "NO! I don't eat at school, it's lucky!" (FYI "Lucky" = "Yucky"). Haha! Adjusting her taste buds from grandma and grandpa's yummy lunches to school food may not be so fun. So when she got home she was starving. And wowza she ate like she hadn't ate in 3 days...an entire bowl of oatmeal, a hot dog weiner, green beans, and I don't know what else...random I know, she picked it.

I've never seen her scarf food down so fast in my life.

Oh and she brought these home..."one for me and one for daddy" :)

I expected her to get sick more often than usual since she was going to be around a bunch of kids now, but didn't expect her to be sick after the FIRST day :( UGH! Friday she started with a runny nose, then this weekend the congestion got worse and she was running a fever...hopefully it doesn't get worse :/

This Weekend: Oh it was SO nice and relaxing!! Saturday we didn't do much of anything. My wonderfully amazing awesome husband let me sleep in while he cleaned the house. OMG! LOVE HIM! Then he washed and waxed my car. We ran the weekend errands and ate some nommy mexican food then rented movies and relaxed the rest of the evening. Much needed! Oh and FYI- We watched Dinner for Schmucks and Youth In Revolt...don't waste your time/money on either one. Dumb. Sunday we went to my nieces B-day party at Chuck E. Cheese. Had lotsa fun!! Then we found out my grandpa was in ICU because he started throwing up blood :( they found a hole in his stomach and he was bleeding internally. He's already on dialysis so it's not looking good. So please keep him in your prayers!

For those of you who were troopers and read this novel of a post, I don't want to leave you on a sad note, so here's a little something that will hopefully give you a chuckle. As I was getting out of the shower Sunday I heard a CRAP ton of racket...like OMG what's going?! I was pretty sure Alexis was up to something. Derek is usually right on top of her, but he wasn't feeling good so he was laying on the couch letting her do whatever she wanted. I walked into this lol...

But Mom I gave him chairs to sit on...

{You can't see it all, but there's 2 chairs in the cage with him, then her table, a truck, a stroller, and her toy story bouncy thing in front, pillow pet thingy on top, then a baby in a playpen and part of her castle on the side.}

She really does need a sibling to play with. This poor dog. Later that night, she was trying to make him wear her castle top on his head as a hat. Bless his heart, he just lays there and takes her sh*t. LOL!

OH.MUH.GAWD. Mommy Meltdown.

I finally bit the bullet and enrolled Lexi in preschool. I have been planning on putting her in for a while now but couldn't bring myself to do it. I even filled out the insanely long application a few months ago, then backed out last minute...OMG the dramzzz! She stays with her grandma all week so this is going to be a big adjustment for us all. The daycare I found seems like a really great place and I know just about everyone that works there, so I'm pretty comfortable with that part, but she's used to being around her family, so dropping her off at a completely foreign place with completely foreign people terrifies the H*ll outta me because I'm afraid she won't cope well at first, bless her heart :( *tearzzzzzz* (Hope you all enjoyed that run on sentence, sorry I'm in panicky mother mode.) But I know it will be great for her once she gets used to it. She LOVES playing with other kids and needs that type of interaction. When I told her grandma I enrolled her, I think she was fixing to cry too:( It's so great to know how much Lexi is loved and cared for, but even grandma's need a break. I don't want her to get burnt out.
I'm taking her to see her new school today after I get off work...let's hope she likes it and that mommy can hold back the tears in fear of making a complete moron outta muhself *Fingers Crossed*
